Delicious Sweet Indian Lentil Bake

Okay so now onto this AMAZING and highly recommended recipe! I adapted it from a recipe tweeted to me from Wholefoods which can be found here: http://www.wholefoodsmarket.com/recipes/3077 


Sweet Indian Lentil Bake

serves 8

Ingredients
1 tablespoon Coconut Oil 
1 yellow onion, chopped 
1 teaspoon ground ginger
 1/2 teaspoon Turmeric 
1 teaspoon curry powder 
1 teaspoon Chana Masala seasoning
2 1/4 cups Lentils
1 cup pitted dates, chopped 
2 teaspoons tamari/soy sauce 
1/2 cup shredded carrot 

Directions
1) In a large saucepan, heat oil over medium heat. Add onion and cook until softened and beginning to brown, about 8 minutes. 
2) Stir in shredded carrot, ginger, turmeric, curry, and chana masala and cook 1 minute. 
3) Add 6 cups water, lentils and dates and bring to a boil. 
4) Reduce heat to medium-low and simmer 30 minutes. 
5) Preheat oven to 350°F. Stir in tamari and transfer lentils to a 2-quart baking dish or casserole. bake 30 minutes, top with seasoning and serve.

  1. Yummmmy. This was delicious, and I am going to try and make it for the family tonight! What flavour does the Chana Masalsa seasoning have, and what else would you recommend that could be similar?

  2. Glad to hear you are going to make it tonight :) let me know what the kids think! As for Chana Masala seasoning it is a mix of equal parts cumin, tumeric, paprika, coriander, ginger and cinnamon. So if need be you can make your own.

    The pumpkin tart recipe will be posted on the 28th! (This Friday... just in time to make it on the weekend :P)
